Kathal ki sabzi
 (raw jackfruit curry) is an Indian vegetarian delicacy cooked especially around the month of Holi, when Jack fruit is in season in north India.

It can be quite an intimidating vegetable owing to its complex process of cleaning and cutting. When cut it is extremely sticky and slimy. One need to keep their hands smeared in oil to prevent it from being slipped. Jack fruit is considered as a meat variant for vegetarians. The Jack fruit is a rich source of dietary fiber and vitamins. It is known for its low sodium and cholesterol content. This is widely eaten raw or ripe all over India.

Kathal ki Sabzi or Raw Jack fruit Curry: This is a delicious mild spiced jackfruit curry. It goes well with rice or hot rotis and puris. It is especially made in North India during the festival of Holi.

 

I N G R E D I E N T S

500 gm jackfruit

For the paste:

1 tsp oil

2 tsp cumin seeds

1 chopped onion

1 tsp finely chopped garlic

1 tsp pepper

1 tsp chili powder

½ tsp turmeric

Whole garam masala (pepper, cloves, mace (aka javintri)

 

For the curry

3 tbsp of oil

1 onion chopped

1 chopped tomato

½ tsp kasoori methi

1 tsp ginger green chili paste (can be used chopped also)

2 tsp coriander

½ tsp garam masala powder

 Salt to taste

Finely chopped coriander leaves

I N S T R U C T I O N S

Cutting process

1. While cutting the jackfruit it is very essential to protect your clothes and cutting boards. Cover it with a silver foil to prevent staining. Smear oil in both your hands and even the knife used for cutting. Then carefully cut the jackfruit into two halves. Then a white liquid is secreted by the fruit. Then cut the stalk and the peel the spiny skin from the jackfruit. Cut the jackfruit into equal sized chunks and rinse it with water.

Cooking process

1 Cook the jack fruit pieces in pressure cooker for 5 minutes (3 whistles) and keep aside.

2 Microwave all the ingredients of paste for 3 minutes and grind into a paste.(you can heat it on gas too for five minutes on slow flame).

3. In the pressure cooker, heat oil and add boiled jack fruit pieces. Cook them on slow flame for some time and remove them from the cooker and keep aside.

4 In the remaining oil add chopped onions and tomato. Cook for some time and add the    masalas. Then add the paste and Jack fruit.

5 Add 1 ½ cup of water and cook for 5-10 minutes in pressure cooker.(3 – 4 whistles)

6 Garnish with chopped coriander and serve hot.
