Recipes # 4 CARROT BITES





Carrots are claimed to be perfect health food as they are rich source of beta carotene, fiber, vitamin K, potassium and antioxidants. In spite of its varied use in curries, salads, juices etc. Its served as sweet in almost every Indian region. Grated carrots cooked with milk, sugar, ghee and nuts mainly called Gajar Ka Halwa, is one of the favourite winter sweet of every home.

I tried this as a healthier version of carrot halwa which has less sweet, no milk and it tastes good too.

INGREDIENTS:

· Carrots 250grams

· Water 1 cup

· Sugar 1/4 cup

· Cardamom powder ¼ tsp

· Corn flour 1 ½ tbsp

· Desiccated dry coconut 2 tbsp

· Pistachios powder 1 tsp



METHOD:

· Peel the carrots and cut into round slices.

· Boil in deep bowl after adding water

· Cook till boiled and drain the water

· Make a smooth paste using the blender

· Take the drained water which should be ¼ cup approximately. (If not add some plain water)

· Add corn flour and make slurry

· Add the slurry to the carrot paste and mix them

· Heat in a pan on medium flame.

· Add sugar and cardamom powder and cook till it thickens.

· Spread evenly in a 7” tray and cover with cling wrap

· Let it set for 6 hours or overnight.

· Cut into cubes and roll them into balls or you can keep them square. Roll them in coconut powder and put pistachio powder on the top and serve.
